I love cheesecake. As in I would rather have cheesecake as my wedding cake than actual cake. Future hubs better be okay with that ;) A few months ago, I found this recipe for a single serving cheesecake on Pinterest, surprisingly had the exact ingredients I needed to make it. Score. That never happens. When I want to make something, I am usually missing one of the ingredients. The other great thing about this recipe is that it's LOW CARB, and you won't even feel a tad bit guilty afterwards.
So here is my recipe. My only suggestion is to make sure you leave it in the fridge for at least an hour to cool. It doesn't have the same effect when you are impatient and take it out at 45 minutes. Trust me, it's worth the extra 15.
Microwave Cheesecake in a Mug
Ingredients
-2 ounces cream cheese (can use greek or low fat/fat free as well)
-1 egg
-1/2 tsp lemon juice
-1/4 tsp vanilla
-2-4 tbsp sugar
-2 tbsp sour cream (can use plain greek yogurt or low fat/ fat free)
-crumbled graham crackers
-toppings of your choice (fruit, chocolate syrup, etc)
Directions
-Combine cream cheese, egg, lemon juice, vanilla, sugar and sour cream in mug and mix well
-Microwave for 30 seconds and repeat twice more
-Sprinkle the graham cracker crumbs and toppings on top
-Let cool for an hour
-Eat and enjoy!
