Cookies and Cream Blondies

I don't know about y'all, but Mondays are always harder after a good weekend! It has been cold and rainy all morning and there is not enough coffee in the world (or my apartment) to get me motivated! One of my roommates celebrated her 22nd birthday this weekend, and the shenanigans included playing 22 by Taylor Swift on repeat, of course. She is not a big cake fan so I had to create something else that she would love her her birthday cake. I found a recipe on Pinterest for Cookies and Cream Blondies (aka the white version of a brownie) and they looked amazing. I had most of the ingredients already which made it even easier to make. She LOVED them. If they hadn't been so rich, I am positive we would have eaten the whole pan last night.


Cookies and Cream Blondies

Ingredients
- 1 cup (2 sticks) butter, softened
-1 cup brown sugar
-1/2 cup sugar
-2 eggs
-1 tsp vanilla
-1 package (3.75 oz) instant vanilla pudding
-2 cups flour
-1 tsp baking soda
-1/2 tsp baking powder
-1 tsp salt
-2 cups of chocolate chips (I did 2 cups of white chocolate but you could also do one white and one semi sweet if you wanted)
-16 double stuffed Oreo cookies, crumbled into pieces

Directions
-In a large bowl, mix together butter, brown sugar and sugar.
-Add in eggs and vanilla and mix until well blended.
-Add in dry pudding mix and mix well.
-Add flour, baking soda, baking powder and salt to the mixture. Mix well.
-Slowly fold in chocolate chips and Oreo pieces.
-Grease a 9x13 inch pan and pour in batter.
-Bake at 350 until center is set, about 20 minutes.

I suggest mixing with a hand mixer until you go to add in the chips and cookies because by then you will have a really thick batter and your mixer will hate you.
