Happy Wednesday! It is a gorgeous 60 degree day here, so you know what that means- iced coffee weather ;)
I got to thinking as I was making my afternoon coffee that I needed to figure out what I was going to eat for dinner, which lead me to thinking about writing a post on some simple meals for college students on a budget or when you're only making enough food for yourself.
Some of my favorites include:
Homemade Easy Mac: Easy Mac is just too expensive to buy in the store when you can make it yourself for much cheaper without the gross processed cheese. I usually get a cup of elbow macaroni and put it in a mug then add water until it covers the pasta. After that I microwave it for three minutes, mix it around, and put it back in for three more. Then I add a few tablespoons of milk and a handful or so of shredded cheese (Food Lion makes a mac and cheese blend) and mix it all together. Viola! Done and ready to eat.
Pizza-dilla: These are great for when you want a big greasy piece of pizza, but not the guilty feeling afterwards. I just take a whole wheat tortilla and spread pizza sauce, cheese, and whatever toppings I want, then you can either cook it in a pan on the stove or use a quesadilla maker. I got my grandma's hand-me-down one so I've been using that!
Burrito Bowl: I know my at home burrito bowls will never compare to Moe's (I'm a Moe's girl in the Moe's vs. Chipotle debate) but I try to make a simple version at home when I don't want have extra money to spend or when I don't feel like driving to Moe's (plus parking sucks there!). I usually cook Minute rice then heat up a serving of black beans, I usually have cooked chicken on hand so I will cut some of that up and top it with cheese, salsa, sour cream and lettuce!
I also like to have salads, sandwiches and soups some nights as well!
