Crockpot Chicken Fajitas

I've been craving fajitas for a couple of weeks now and could not find a recipe that I absolutely loved. So when that happens, you just have to make up your own ;)

I absolutely hate cooking frozen chicken breasts because it is time consuming and I can taste the difference. Since I only have to cook for myself, I usually just get a package of chicken tenderloins and use them for whatever recipe I find and eat on that meal for dinner Sunday-Thursday. I got even lazier this morning (first day of classes aka the beginning of my week this week) and decided to cook my chicken in the Crockpot. I kind of just threw some shit in there and hoped it turned out okay. As it turns out, it smelled amazing when I got home and tasted even better.

Here is how I made my fajitas:

Ingredients:
1 package chicken tenderloins
1 package fajita seasoning mix
1 green pepper, sliced
1 t minced garlic
1 T butter (margarine is also fine!)
Salt & Pepper as needed
*Onion--- I am not a big fan of onions so I opted for a dash of onion powder instead

Directions:
-Put butter and garlic in the bottom of the Crockpot
-Add in sliced peppers (and onions)
-Place chicken on top of peppers
-Top with fajita seasoning, salt, & pepper
-Cook on low for 6 hours or until chicken is tender and can be pulled apart with a fork
-Serve on tortillas with cheese and sour cream

So easy and so good. I will definitely be making them again. I should be able to get 5 fajitas out of this amount, but you can definitely adjust it to your needs!

As far as the 21 day fix goes, a serving counts for 1 red (chicken), 1/2 green (peppers), 1 yellow (tortilla) and 1/2 blue (cheese).
